Soft Ripened Cheese

Soft cheeses are characterized by their creamy texture and high moisture content. They are often not aged or are aged for a very short period, resulting in a mild, often tangy flavor and a soft, spreadable texture. The rind can be bloomy or washed, contributing to their distinct flavors.

Brie

Named after the French region from which it originated, Brie is a soft cheese made from cow’s milk, recognized for its creamy interior and edible white rind. Our Australian Brie, made using the highest quality milk sourced right here in Harvey, showcases the wonderful region within which we are located. When young, Brie is firm and pale with a mild taste, becoming more rich and buttery as it ages. The rind, which is typically a white mold, is meant to be eaten and adds to its complex flavors. Brie is often served at room temperature or baked to enhance its creamy texture, making it a versatile choice for cheese boards, sandwiches, and as an ingredient in various dishes.

Crafted in the south west of WA, our range of Camembert cheese offers a true taste of local artisanal craftsmanship. This soft, creamy cheese, encased in a delicate white rind, is made using traditional methods and the finest local milk. As it ripens, the interior becomes increasingly soft and buttery, that are characteristic of authentic Camembert.

St Duke's White
