Fetta

A brined white cheese originally from Greece. Traditionally made from sheep’s milk, our fetta is made from cow’s milk and is characterized its tangy and salty flavour profile and crumbly texture. Fetta is cured in a saltwater solution (brine) which gives it both its distinctive taste and its ability to be preserved for extended periods. The cheese has a high moisture content but does not melt easily, making it ideal for salads, baked dishes and as a table cheese.

Natural Savoury

Natural Savoury

Based on the Romano style of cheese. At four months old it develops a clean texture and a rich but tart flavour with a nutty bouquet, which gains in intensity and complexity as the cheese ages. If allowed to mature for upwards of 12 months, the cheese begins to show evidence of lactate crystals both on the surface and in the body of the cheese, which give the product a piqauncy and granular texture.

 Swiss cheese, often recognized by its iconic holes or "eyes," is a generic name for several related varieties of cheese that originated in Switzerland. The most famous of these is Emmental, known for its mild, slightly nutty and buttery flavor. The holes in Swiss cheese are formed by carbon dioxide gas bubbles produced by the bacteria that are part of the ingredients. Swiss cheese is made primarily from cow's milk and is semi-hard in texture. It’s known for being versatile in culinary uses, excellent both melted and eaten cold.
